Freezing Cupcakes, Real Results

A few weeks ago I talked about freezing and defrosting cupcakes. Last night I got to taste the results of another frozen cupcake experiment.
A couple of weeks ago I froze six of the carrot cupcakes with cream cheese frosting that I had made for my Dad’s birthday. I stuck the frosted cupcakes into a tupperware container, unwrapped, and froze them.
My sister came over last night so I could finish sewing her Halloween costume. She had missed the cupcakes the first time around since she had left early. I had promised to save some for her.
When we were almost done sewing, I removed the cupcakes from the container and let them defrost for about an hour. They were as good as new! My sister claimed two since she didn’t have any the first time. Delicious!

I’m really glad to hear this Lorene – I’ve just made a double batch to decorate for Halloween, but I think that I’ve got far too many, so I think a bunch will be going in the freezer now that I know it works! I just defrosted some leftover butter cream frosting from last time too, and it was delicious!
